Hotel, Restaurant And Retail Trade Services – Public Service Concession For The Provision Of Hotel And Leisure Catering Services On Various Sites At The Marseille-Aubagne Defense Base.. The Purpose Of This Consultation Is To Entrust To A Concessionaire, As Part Of A Public Service Concession, The Realization And Supply Of Catering, Hotel And Personnel Condition Activities For The Benefit Of Active And Non-Active Nationals Of The Ministry Of The Armed Forces. , On The Sites Of The Marseille-Aubagne Defense Base, 13007 Marseille (The Sites, All Located In Marseille, Are Specified In The Consultation Regulations) The Major Expectations Of The Granting Authority Are As Follows: Improvement And Modernization Of All Services Catering Hospitality Leisure; Food Safety And Security Of Services; Continuity Of Service In The Event Of Force Majeure; Cost Control Taking Into Consideration The Quality Of Life In The Workplace And The Social Nature Of The Expected Service. The Granting Authority Entrusts The Management Of The Public Catering And Hotel Service To The Concessionaire To Whom The Risk Linked To The Operation Of The Service Is Transferred, In Return For The Right To Operate The Service. The Concessionaires Remuneration Is Substantially Ensured By Operating Results. The Concessionaire Pays The Granting Authority A Royalty Containing A Fixed Part And A Variable Part, Proportional To The Operating Results. The Concessionaire Is Responsible For The Maintenance And Proper Use Of The Sites, Equipment And Related Technical Elements As Well As The Good Technical And Financial Management Of The Collective Catering And Hotel Service.
